Chicken Spaghetti Squash

Spaghetti squash is one of my absolute favorite Paleo meals for the sole reason that it successfully tricks my mind into believing I’m eating carbs! It’s a quick, easy, satisfying meal–and adding some chicken makes it that much better!

Ingredients: IMG_04981 Spaghetti Squash
1/2 Onion
1 Chicken Breast
1 Tomato
Spinach
Parmesan Blend Seasoning
Traditional Pasta Sauce
Onion Powder
Garlic Powder
Salt
Pepper
Olive Oil

Instructions:
Step 1: Pre-heat oven to 400º. Cut spaghetti squash in half and clean out the insides. Place in oven insides up.

Step 2: Season chicken breast with salt, pepper and onion powder to taste. Start to cook the chicken (you could grill yours, but I do mine over the stove because thats the only way I know how to!). Simultaneously, start to slowly sauté spinach, onions and tomatoes.

Step 3: Once the spaghetti squash has been in the oven for 20 minutes, take out the spaghetti squash and drizzle olive oil over the top. Additionally, top the spaghetti squash with parmesan blend and garlic powder.

Step 4: Mix chicken in with veggies to finish cooking. Then mix in pasta sauce into pan to warm, too.

Step 5: The spaghetti squash should be done after about 40 minutes total (another 20 minutes after you top with olive oil and seasonings).

Let it cool for about 5 minutes before scraping the “noodles” out with a fork. Then, enjoy!IMG_0568
