Valentine’s Day doesn’t need to be an excuse to indulge in what only makes you feel guilty after you eat it – especially when you’re less than four months away from your wedding! So to stray away from any temptations, I went straight to Pinterest, found a great website, and made a healthier alternative.
Introducing to you, blog followers: Paleo Strawberry Brownies! These little guys are shockingly delicious. Here’s how you make them.
Ingredients for the brownies:
½ cup + ⅛ cup coconut oil
1¼ cups coconut sugar
¾ cups +⅛ cup unsweetened cocoa powder
¼ teaspoon salt
1 teaspoon vanilla extract
2 large eggs
½ cup almond flour
1 cup dark chocolate chunks
8″x8″ baking pan
Large microwave safe bowl
Small mixing bowl
Prep time: 15
Cook time: 25
*Next time I will totally double the strawberries or add a cup of diced bananas to go with the cup of strawberries.
And here’s what to do, it’s real easy:
Step 1: Preheat oven to 325°F. Line your baking pan with aluminum foil and leave some hanging over the sides. Spray with cooking spray. Set pan aside.
Step 2: In your large bowl, combine coconut oil, coconut sugar, cocoa powder, salt, and heat on high power to melt for about 30 seconds. Stop to stir. Repeat but with 10-second bursts until mixture has melted and can be stirred smooth.
Step 3: Add the vanilla and eggs. Stir until batter is thick and well blended. Add the almond flour and stir until combined. Pour the batter into the prepared pan and spread evenly.
Step 4: Bake until you can put a toothpick in the center and pull it out just slightly moist with batter (about 20 minutes); toothpick should come out with moist crumbs attached. Let brownies cool completely.
Step 5: While brownies are cooling, go ahead and make the chocolate topping. In your small bowl, whisk together the coconut oil, cocoa powder, and maple syrup.
Step 6: Spread diced strawberries over the brownies.
Step 7: Pour chocolate topping evenly over the strawberries. Refrigerate for at least 1 hour (I let them chill over night) before cutting into 9 squares.
Step 8: Enjoy it!
