Chocolate Chip Banana Bread

Ding ding ding – we have a WINNER, people! My new favorite Paleo bake! I’m pretty sure this Chocolate Chip Banana Bread would be a favorite in any crowd – Paleo or not. Seriously.

The first loaf only lasted all of three days in our house of three (well, three if you count Nala – which, we do), so I can’t speak to how long the bread will stay fresh, but I will say it tasted delicious all three days it was around.

Delicious, people. Delicious. Have I sold you yet?

Here’s what you need to make your own:

  • 2.5 large bananas
  • 2 large eggs
  • 3/4 cup almond butter
  • 1/3 cup maple syrup
  • 1 tablespoon vanilla
  • 1 tablespoon coconut oil – melted
  • 1/2 cup tapioca flour or starch
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 2 teaspoon cream of tartar
  • 1/4 teaspoon sea salt
  • 1 teaspoon coco baking powder
  • 1/2 cup dark-chocolate chips

And here’s what you’ll do:

Step 1: Preheat your oven to 350°F & grease your loaf pan in coconut oil

Step 2: In a blender, blend bananas, eggs, almond butter, maple syrup, vanilla, and coconut oil.

Step 3: In a bowl, mix tapioca flour, cinnamon, nutmeg, baking soda, cream of tartar, salt, coco powder, and chocolate chips. Once mixed well, combine in blender and blend it all as one.

Step 4: Pour into pan, and bake for 43 – 45 minutes.
